How it WorksThe TrimVac is used to trim and contain cheese mold, preventing the possibility of cross contamination. Various blades are available that enhance scraping action on the cheese surface, or digging out internal mold growth. Pneumatically powered, the TrimVac uses a rotating blade to provide the cutting action, while a highly effective vacuum system removes mold. Material is conveyed so mold spores do not come into contact with other cheese, workers or the floor. The work area has less opportunity for contamination, and the process is simplified.
